Land Crab on St. Croix

Land crabs are common on the island and are considered a delicacy by some locals. They are primarily nocturnal, to avoid being eaten by birds, so locals will go out at night with flashlights and buckets to catch them. They live in holes that they dig in the ground so you have to dig them up. Locals then use them to make a seasoned stew.
